Brief description of the substance

Castor oil is a vegetable oil obtained from the seeds of the castor plant (Ricinus communis). Castor oil is a triglyceride in which approximately ninety percent of fatty acid chains are ricinoleic acid (C18:1 OH), while oleic (C18:1) and linoleic (C18:2) acids are the other significant components. Catalytic dehydration converts castor oil into fats and glyceridic oils, castor, dehydrated. In the dehydration reaction, the hydroxyl group at the 12th position of the ricinoleic acid is removed along with a hydrogen atom from the 11th or 13th carbon atom to form water and a new double bond.
